Spinach, egg, and parmesan pizza

Hubby and 11-year-old are super into dad jokes these days…

Hubby: How do you call a deer without eyes?

Spinach, egg, and parmesan pizza

(Adapted from Polpo: A Venetian Cookbook)

2 bunches of spinach
1 garlic cloves (finely chopped)
A handful of grated Parmesan
1 tbs creme fraiche (or yogurt, sour cream).
Salt and pepper to taste
1 ball of pizza dough (we bought at Whole Foods)
2 large eggs

  1. Place a pizza stone in the oven.
  2. Preheat the oven to 450 F.
  3. In a large pot of boiling salted water, blanch the spinach for 1 minute.
  4. Remove the spinach and drop into iced water.
  5. Squeeze all excess water from the spinach and finely chopped.
  6. In a mixing bowl, mix chopped spinach + garlic + Parmesan + creme fraiche + salt + pepper.
  7. Roll the pizza dough as thin as possible.
  8. Spread the spinach mixture over the pizza.
  9. Create two shallow holes in the spinach mixture.
  10. Crack two eggs onto the holes.
  11. Bake for 6-8 minutes.
  12. Sprinkle more Parmesan and pepper before serving if you prefer.
