Spinach, egg, and parmesan pizza
(Adapted from Polpo: A Venetian Cookbook)
2 bunches of spinach
1 garlic cloves (finely chopped)
A handful of grated Parmesan
1 tbs creme fraiche (or yogurt, sour cream).
Salt and pepper to taste
1 ball of pizza dough (we bought at Whole Foods)
2 large eggs
- Place a pizza stone in the oven.
- Preheat the oven to 450 F.
- In a large pot of boiling salted water, blanch the spinach for 1 minute.
- Remove the spinach and drop into iced water.
- Squeeze all excess water from the spinach and finely chopped.
- In a mixing bowl, mix chopped spinach + garlic + Parmesan + creme fraiche + salt + pepper.
- Roll the pizza dough as thin as possible.
- Spread the spinach mixture over the pizza.
- Create two shallow holes in the spinach mixture.
- Crack two eggs onto the holes.
- Bake for 6-8 minutes.
- Sprinkle more Parmesan and pepper before serving if you prefer.
