Easy caramelized salmon
(Adapted from Mon An Ngon)
3 lbs salmon fillets (skinless)
4 shallots (peeled, chopped)
5 garlic cloves (peeled, chopped)
6 tbs fish sauce
2 tbs sugar
1 tbs Sriracha
1 tsp ground pepper
1 tbs canola oil + 2 tbs sugar (for the caramel sauce)
Chopped scallions (optional)
- Divide the chopped shallots and garlic into 2 parts.
- In a small bowl, mix 1 part of shallots and garlic + fish sauce + sugar + Sriracha + ground pepper. Set aside
- In a large skillet, heat 1 tbs canola oil + 1 tbs sugar under medium heat to make caramel sauce.
- When the sugar turns dark yellow, quickly add the remaining shallots and garlic. Stir quickly.
- When the shallot and garlic mixture become fragrant, add salmon fillets.
- Add the sauce in Step (2) to the skillet.
- Add about 1 cup of water.
- Simmer the fillet until the sauce is reduced to 1/4.
- Sprinkle with chopped scallions if using.
- Serve hot.
