Korean Marinated Eggs (Mayak Gyeran)

6 eggs
1 tsp salt
1 tbs of distilled white vinegar
8 tbs of soy sauce
4 tbs of mirin
4 tbs water
1 tbs sesame oil
1 tbs roasted sesame seeds
3 garlic cloves (minced)
1 scallions (chopped)
- In a saucepan, heat water (enough to cover the eggs) + salt + vinegar over high heat.
- When the water is boiling, add 6 eggs.
- Continue to cook for 6 minutes and 30 seconds.
- Remove the eggs and let them rest in cold water for at least 10 minutes.
- Peel the eggs and set aside.
- In a container, mix soy sauce + mirin + water + sesame oil + roasted sesame seeds + garlic + scallions.
- Add the eggs to the marinade.
- Cover the container and refrigerate overnight.
