Crispy meatballs with quail eggs

For 10 meatballs

1 lb raw Vietnamese pork ham (recipe here)
10 quail eggs (1 tbs distilled weight vinegar + 2 tsp salt)
1 large chicken egg
Bread crumbs

  1. In a saucepan, boil water with vinegar + salt.
  2. Add quail eggs.
  3. Cover and cook for 6 minutes.
  4. Drain, cool, and peel.
  5. Divide the raw pork ham into 10 portions.
  6. Make 10 meatballs, each with a quail egg inside.
  7. In a small bowl, beat the chicken egg with a fork.
  8. Dip the meatballs into the egg and then cover with breadcrumbs.
  9. In a small saucepan, pour the oil, about 1″ depth.
  10. Once the oil is hot, fry the meatballs for about 2-3 minutes.
  11. Drain the meatball on a rack.
  12. Eat warm.
