Crispy meatballs with quail eggs

For 10 meatballs
1 lb raw Vietnamese pork ham (recipe here)
10 quail eggs (1 tbs distilled weight vinegar + 2 tsp salt)
1 large chicken egg
Bread crumbs
- In a saucepan, boil water with vinegar + salt.
- Add quail eggs.
- Cover and cook for 6 minutes.
- Drain, cool, and peel.
- Divide the raw pork ham into 10 portions.
- Make 10 meatballs, each with a quail egg inside.
- In a small bowl, beat the chicken egg with a fork.
- Dip the meatballs into the egg and then cover with breadcrumbs.
- In a small saucepan, pour the oil, about 1″ depth.
- Once the oil is hot, fry the meatballs for about 2-3 minutes.
- Drain the meatball on a rack.
- Eat warm.
