Salmon and mushroom parcels
(Loosely adapted from Simply Japanese)
5 salmon steaks, about 1/2 lb each
1 large onion (sliced)
1/2 lb button mushrooms or oyster mushrooms (sliced)
1/2 lb fresh shiitake mushrooms (sliced)
5 tbs soy sauce
3 tbs mirin
1 tbs sesame oil
1/4 tsp salt
1/4 tsp ground pepper
- Preheat the oven to 400 F.
- In a small bowl, mix soy sauce + mirin + sesame oil + salt + pepper.
- Prepare 5 sheets of aluminum foil, about 12″ square.
- Spread the onions on the foil.
- Place the salmon on top.
- Add the mushroom.
- Pour the soy sauce mixture on top.
- Tightly close the foil to form a parcel.
- Bake for 12-15 minutes.
- Serve immediately.
