Salmon and mushroom parcels

(Loosely adapted from Simply Japanese)

5 salmon steaks, about 1/2 lb each
1 large onion (sliced)
1/2 lb button mushrooms or oyster mushrooms (sliced)
1/2 lb fresh shiitake mushrooms (sliced)
5 tbs soy sauce
3 tbs mirin
1 tbs sesame oil
1/4 tsp salt
1/4 tsp ground pepper

  1. Preheat the oven to 400 F.
  2. In a small bowl, mix soy sauce + mirin + sesame oil + salt + pepper.
  3. Prepare 5 sheets of aluminum foil, about 12″ square.
  4. Spread the onions on the foil.
  5. Place the salmon on top.
  6. Add the mushroom.
  7. Pour the soy sauce mixture on top.
  8. Tightly close the foil to form a parcel.
  9. Bake for 12-15 minutes.
  10. Serve immediately.
