Roasted chestnuts
(Adapted from Italian Recipe Book)
1 lb raw chestnuts (Trader Joe’s has great chestnuts during this time of the year)
Water
- Wash chestnuts and discard any damaged one.
- Use a serrated knife to score an X on the round side of each chestnut.
- Soak the scored chestnuts in a bowl of water for at least 30 minutes (best is 1-2 hours)
- Preheat oven to 400 F.
- Arrange chestnuts in a single layer on a baking sheet lined with a parchment paper.
- Note: make sure the score side is up.
- Roast for 20-25 minutes.
- Remove from the oven.
- Cover the chestnuts on a baking sheet with a damp kitchen towel.
- Let rest for 10 minutes.
