Roasted chestnuts

(Adapted from Italian Recipe Book)

1 lb raw chestnuts (Trader Joe’s has great chestnuts during this time of the year)
Water

  1. Wash chestnuts and discard any damaged one.
  2. Use a serrated knife to score an X on the round side of each chestnut.
  3. Soak the scored chestnuts in a bowl of water for at least 30 minutes (best is 1-2 hours)
  4. Preheat oven to 400 F.
  5. Arrange chestnuts in a single layer on a baking sheet lined with a parchment paper.
    • Note: make sure the score side is up.
  6. Roast for 20-25 minutes.
  7. Remove from the oven.
  8. Cover the chestnuts on a baking sheet with a damp kitchen towel.
  9. Let rest for 10 minutes.
