Grilled ground pork (nem nướng)

Ingredients

  • 2 lbs ground pork
  • 1 tsp salt
  • 4 tsp sugar
  • 2 ½ tsp Knorr chicken powder
  • ½ tsp five-spice powder
  • 1 tsp baking powder
  • 30 g (about 2 Tbsp) maple syrup
  • 10 g (about 2 tsp) Maggi sauce
  • 100 g (about 7 Tbsp) cold water
  • Fresh lettuce, cucumber slices, and herbs (cilantro, mint, etc.) for serving

Instructions

  1. Prepare the marinade
    In a large bowl, whisk together the salt, sugar, chicken powder, five-spice powder, baking powder, maple syrup, Maggi sauce, and cold water.
  2. Mix in the pork
    Add the ground pork and mix thoroughly until everything is well combined.
    Optional but recommended: Chill the mixture in the refrigerator for 2 hours. Then, using a stand mixer with the paddle attachment, beat the pork for 5 minutes to achieve a springy, bouncy texture.
  3. Prepare the grill baskets
    Lightly oil two grill baskets to prevent sticking. Spread a thin, even layer of the pork mixture onto each basket.
  4. Grill
    Cook the pork over medium-high heat for 1–2 minutes per side, until lightly charred and cooked through. The meat should be juicy but firm.
  5. Slice and serve
    Remove the grilled pork from the baskets and slice into strips. Serve immediately with lettuce, cucumber, and fresh herbs for wrapping.
