Of course, I’m brimming with joy. And I’m making him his favorite dish “Bò bía” (Chinese sausage spring rolls).

Chinese Sausage Spring Rolls (Bò Bía)

1 large jicama (thinly sliced match-stick size)
5 eggs (omelette and thinly sliced)
2 Chinese sausages (cooked and thinly sliced)
1/4 cup dried shrimps (soaked in hot water for about 30 mins)
1/2 lettuce head (thinly sliced)
1 small bunch of Thai basil (or mint)
1 package of rice paper

  1. Heat a large skillet with 1 tbs canola oil, add jicama and stir until slightly soften.
  2. Drain the shrimps and mash to small pieces. Use the same skillet, stir fry the shrimps until they became a bit crunchy.

To assemble: Dampen a rice paper. Lay some lettuce, herbs, jicama, egg, shrimp, and finally 2 slices of Chinese sausage on top. Roll and set aside.

Hoisin sauce

1/2 cup hoisin sauce
1 tbs ketchup
1 tbs peanut butter (I skipped because my kid is allergic)
1 tsp sriracha
Crushed nuts

Mix all ingredients together and serve with the rolls.
