Okay, I’ve been spoiled rotten. I admit!
Traveling on your birthday is never easy, unless you got into the plane and saw this:

Let’s just say getting old doesn’t feel so bad 😉
Thai grilled chicken
1 chicken, about 3 lbs (quartered)
3 garlic cloves
1 small bunch of coriander (coarsely chopped)
2 tbs fish sauce
2 tbs canola oil
2 tbs oyster sauce
1/2 tsp kosher salt
1/2 tsp ground pepper.
- Use a hand blender to process all marinate ingredients (except chicken) until smooth.
- In a large oven-proof skillet, marinate chicken for at least 2 hours.
- Preheat oven to 450 F.
- Bake chicken (covered by a piece of aluminum foil) for 45′-50′.
- Broil for another 5′.
- Serve hot.
