Cucumber, pear, and mint salad

After a day chasing after the kids and rushing them to different activities, I was exhausted.

10-year-old: Mom, I know, having three kids is hard. But do you know what’s even harder?

Me: ???

10-year-old: Having FOUR kids!

(With my hilarious kids, a day always ends up with a laughter. I’m very thankful!).

Cucumber, pear, and mint salad

(Adapted from The East African cookbook)

1 English cucumber (chopped 1/2″ cubes)
1 firm Bartlett pear (chopped 1/2″ cubes)
3 spring onions, green part only (chopped)
1/4 white onion (chopped)
1 small bunch of fresh mint (chopped)
1/2 lime (juiced)
1 tbs olive oil
Salt to taste

  1. In a bowl, mix chopped cucumber + pear + spring onions + white onion + mint.
  2. In a small bowl, mix lime juice + olive oil + salt to taste.
  3. Before serving, pour dressing in step (2) over the cucumber, pear, and mint salad.
