After a day chasing after the kids and rushing them to different activities, I was exhausted.

Cucumber, pear, and mint salad
(Adapted from The East African cookbook)
1 English cucumber (chopped 1/2″ cubes)
1 firm Bartlett pear (chopped 1/2″ cubes)
3 spring onions, green part only (chopped)
1/4 white onion (chopped)
1 small bunch of fresh mint (chopped)
1/2 lime (juiced)
1 tbs olive oil
Salt to taste
- In a bowl, mix chopped cucumber + pear + spring onions + white onion + mint.
- In a small bowl, mix lime juice + olive oil + salt to taste.
- Before serving, pour dressing in step (2) over the cucumber, pear, and mint salad.
