Molten chocolate fondant

(Adapted from J’aime et je cuisine le chocolate)

For 6 servings

4 eggs
75 g sugar
55 g almond flour (or 40 g all-purpose flour)
100 g unsalted butter
150 g dark chocolate
Butter and flour to brush ramakins
Vanilla ice-cream

  1. Preheat oven to 410F.
  2. In a medium heat-proof bowl, melt 100 g + 1 tbs unsalted butter over a pot of boiling water.
  3. Use a brush to brush 6 ramekins with melted butter and sprinkle flour. Set aside.
  4. Add 150 g chocolate to the butter bowl in step #2, melt the mixture over the pot of boiling water. Set aside.
  5. In a medium bowl, use a whisk to mix eggs with sugar.
  6. Whisk melted butter chocolate into the egg and sugar mixture.
  7. Sift almond flour (or all-purpose flour) into the chocolate batter.
  8. Divide the batter into 6 ramekins.
  9. Bake for 9-10 minutes.
  10. Carefully unmold the cake onto a plate.
  11. Serve immediately with vanilla ice-cream.
