Hummus with lemon and fried garlic

Hummus with lemon and fried garlic

(Adapted from Ottolenghi’s Flavor)

Hummus:
1 can of canned chickpeas
1 lemon (zest and juice)
1 piece of ginger, about 1″ (peeled, and finely grated)
1 tbs olive oil
1 garlic clove
2 tbs ice-cold water
1/2 tsp flaked sea salt (to taste)

Fried aromatics:
3 tbs olive oil
5 large garlic cloves (thinly sliced)
1 piece of ginger, about 1″ (peeled and julienned)
1 cinnamon stick
A few cilantro sprigs (cut into 1″ length)
flaked sea salt (to taste)

To make the hummus:

  1. In a blender, blend all hummus ingredients until smooth.
  2. Set aside.

To make the aromatics:

  1. In a medium frying pan, heat 3 tbs olive oil under medium-high heat.
  2. Add garlic + ginger + cinnamon and fry until garlic slices turn slightly golden.
  3. Add the cilantro and fry until the garlic is golden.
  4. Use a slotted spoon to tranfser the aromatics to a plate.
  5. Reserve the oil.
  6. Sprinkle the oil with salt.

To assemble:

  1. On a plate, spoon the hummus into the center.
  2. Use the back of the spoon to create a shallow well in the center.
  3. Spoon the aromatic oil onto the well.
  4. Top with the fried aromatics.
  5. Serve with pita or bread.
