Crabmeat fried rice

Crabmeat fried rice

(My own version)

For 4 people as main dish

For the stir-fried beansprout:
1 tbs canola oil
1/2 lbs beansprout
1/2 tbs fish sauce

For the crabmeat:
1 tbs canola oil
5 garlic cloves (peeled, finely chopped)
8 oz crabmeat
Freshly ground pepper

For the fried rice:
2 tbs canola oil
1 lemongrass stalk (finely chopped)
1 piece of ginger, about 1″ (peeled, finely chopped)
10 garlic cloves (peeled, finely chopped)
1 large carrot (peeled, cubed)
4 cups cooked rice
4 eggs (cracked and whisked with 1 tbs fish sauce)
1 ripe but still firm mango (cubed)

To serve:
Fried shallots
Roasted nuts (e.g. almonds, macadamia, peanuts, etc.) (coarsely chopped)
Chopped herbs (coriander, mints, etc.)
Lime wedges
All-purpose dipping sauce

To make the stir-fried beansprout:

  1. In a medium nonstick skillet, heat 1 tbs canola oil.
  2. Add beansprout and stir quickly, about 30 seconds.
  3. Add about 1/2 tbs fish sauce, and stir for another minute.
  4. Set aside.

To make the crabmeat:

  1. Using the same nonstick skillet, heat 1 tbs canola oil.
  2. Add chopped garlic and fry until fragrant.
  3. Add crabmeat and stir carefully to avoid breaking all the beautiful lumps.
  4. Fry until crabmeat is slightly dry.
  5. Generously sprinkle freshly ground pepper.
  6. Set aside.

To make the fried rice:

  1. In a large nonstick skillet, heat 2 tbs canola oil.
  2. Add chopped lemongrass + chopped ginger + chopped garlic.
  3. Fry until fragrant, about 1 minutes.
  4. Add carrot cubes and continue to fry until half-cooked, about 1 minutes.
  5. Add cooked rice, stir gently.
  6. Pour the egg mixture over the rice, and mix thoroughly.
  7. Remove the skillet from the heat.
  8. Gently fold cubed mango in.
  9. Serve immediately.

To serve:

  1. On a plate, put about 1 cup of fried rice onto one side.
  2. Place crabmeats, stir-fried beansprouts, fried shallots, and chopped ground nuts around the plate.
  3. Add a lime wedge on the side.
  4. Sprinkle chopped herbs on top.
  5. Serve immediately with dipping sauce.
  6. To eat, mix everything together and add dipping sauce to taste.
