Grilled Fish with Scallion Oil (Cá nướng mỡ hành)


My hubby presented his paper of the pirates of Somalia at 12:30 last Wednesday.

Me: I’m going!
Hubby: It’s all about the methodology – very boring, babe.
Me: I’m still going!
Hubby: Lots of maths?
Me: I’m still going!
Hubby: We don’t provide free lunch?
Me: Okay, you convinced me!!

Grilled Fish with Scallion Oil (Cá nướng mỡ hành)

1 rockfish, or snapper, or tilapia, or salmon fillet (about 3 lbs)
2 tbs fish sauce
2 tbs sugar
1 tbs oil
2 tsp ground pepper
1 1″ ginger (grated, leave about 1 tsp for scallion oil)
3 garlic cloves (finely chopped)
1 shallot (finely chopped, leave about 1 tsp for scallion oil)
1 lemongrass (finely chopped)
Roasted nuts (coarsely chopped)

  1. Clean and pat dry the fish.
  2. Make a few slits on both sides of the fish.
  3. Combine all ingredients (except the nuts).
  4. Marinate the fish for at least 3 hours, best over night.
  5. Preheat the oven to 400F.
  6. Line a roasting pan (with a roasting rack) with aluminium foil.
  7. Place the marinated fish on the rack, and bake for about 45 minutes (longer if you use bigger fish).
  8. Broil it for another 5 minutes.
  9. Before serving, top it with scallion oil (see recipe below) and roasted nuts.

Scallion Oil

4 tbs canola oil
5 scallions (finely chopped)
1 tsp shallot (finely chopped)
1 tsp ginger (grated)
1 pinch of salt

  1. In a small sauce pan, heat the canola oil under medium heat.
  2. Add the rest of the ingredients, and turn off the heat right away.
  3. Alternatively, mix all ingredient together in a microwave-safe bowl, and put in the microwave for about 1-2 minutes.
