Thanksgiving means food! Lots of food. And NO social pressure of getting gifts, cards, or whatever the commercial ads convince us to do. What not to love about Thanksgiving?

So, yesterday, my 4-year-old asked “Mom, what are you thankful for?”

Me: I’m thankful for spending time with you, your sisters, and papa everyday. How about you?

4-year-old (deep in thought): I’m thankful for Star Wars. I like Star Wars Legos!

For Thanksgiving dinner, I held my breath and tried two new recipes: herbed garlic bread knots and apple tarte tarin. Both turned out to be fantastic!!!

Herbed Garlic Bread Knots

(Adapted from White on Rice Couple)

For about 20 rolls

For the dough:
210 ml warm water
30 ml olive oil
1/2 tsp kosher salt
1 1/2 tsp sugar
2 tsp active dry yeast
340 g bread flour
Olive oil (to brush)

For the herbed garlic coating:
40 ml olive oil
2 tbs butter
5 garlic cloves (minced)
10 g chopped fresh herb (rosemary, thyme, parsley, basil, oregano, etc.)
Sea salt (optional)

To make the dough:

1. In a large bowl, mix water, olive oil, salt, sugar, and yeast.
2. Add flour, mix until combined.
3. Cover and let it proof until double, about 1-2 hours.
4. Then chill in the fridge, if not using immediately, for up to several days.
5. Line 2 baking trays with silpat or parchment paper.
6. Divide dough into small balls, about 30 g each.
7. Roll each ball into a 15cm-rope.
8. Tie dough ropes into knots.
9. Place on lined baking trays.
10. Cover with plastic wrap.
11. Let them proof until double, about 30 mins to 1 hour.
12. Preheat oven to 400F.
13. Lightly brush knots with olive oil.
14. Bake for 15 minutes.
15. Switch trays in the oven.
16. Bake for another 3 minutes.

To make the coating:

1. In a saucepan, warm oil, butter, and garlic.
2. Cook for about 2 minutes.
3. Add fresh herb.
4. Place bread knots in a large bowl, pour the herbed-garlic coating on top, give it a few shake.
5. Sprinkle with sea salts if using
6. Serve warm.
