When the kids go to bed….
Vietnamese Pomelo Salad
(Adapted loosely from Viet World Kitchen)
For 2 people
1/2 large pomelo (peeled)
10 large shrimps (cooked, chopped)
100 g chicken or pork (cooked, thinly sliced)
2 tbs chopped mint
2 tbs chopped coriander
2 tbs chopped roasted nuts
2 tbs crispy caramelized shallots (optional)
1 tbs fish sauce
1 tbs fresh lime juice
1 tbs sugar
1 tbs water
pinch of salt
1 garlic cloves (minced)
1/2 red Thai chili (minced)
- In a large bowl, mix all salad ingredients except nuts and shallots
- In a small bowl, combine all dressing ingredients and set aside.
- Before serving, pour sauce over salad bowl, gently mix, and add nuts and shallots on top.
