What to do when we have fresh lo mein noodles? We stir fry with whatever left in the fridge 🙂
Stir-fried lo mein with beef and broccoli
(Adapted from Serious Eat)
For the protein:
1 lbs flank (thinly sliced), or chicken or seafood
1/2 tsp sugar
1 tsp Shaoxing wine
1 tsp soy sauce
1/2 tsp fish sauce
1 tsp cornstarch
Ground pepper
For the sauce:
2 tbs sesame oil
1 1/2 tbs soy sauce
1 tbs oyster sauce
1/2 tsp sugar
2 tsp Shaoxing wine
2 tbs water
For the noodles:
1 lbs fresh lo mein noodles
3 garlic cloves (minced)
Broccoli or other vegetable of your choice
Vegetable oil
- Marinate beef with all ingredients. Set aside.
- In a mixing bowl, combine all ingredients for the sauce.
- In a stockpot, boil water and blanch the noodles for 3-4 minutes.
- Heat 2 tbs oil in a wok over high heat. Add beef and cook for 1-2 minutes. Remove and set aside.
- Add broccoli or other vegetables in the wok. Cook for 1 minute then add 1/4 cup water to steam. Remove once water has evaporated. Set aside.
- Add 2 tbs oil in the work, then add lo mein.
- Add the sauce.
- Finally add garlic, beef, and broccoli.
- Serve immediately.
