What does it mean when summer comes? Our favorite ice-cream truck is back to the neighborhood! As soon as we heard the music passing by the house, 5-year-old grabbed her bike and raced after the melody. What a ride! A popsicle in the park was a hearty reward.
Pork-stuffed tofu in tomato sauce
(my own impromptu version)
450g firm tofu (pat dry and cut into 8 thick pieces)
100 g ground pork
1 tbs oyster sauce
1 shallot (minced)
1/4 tsp ground pepper
4 tbs canola oil
2 tomatoes (coarsely chopped)
1 tbs fish sauce
100 ml broth or water
1/4 tsp ground pepper
- In a small bowl, mix pork + oyster sauce + minced shallots + ground pepper. Divide into 8 small balls.
- Use a sharp pointy knife to make a thin incision in the middle of a piece of tofu.
- Stuff pork ball in the tofu.
- Heat 2 tbs canola oil in a non-stick skillet over medium-high heat.
- Fry pork-stuffed tofu until golden on both sides. Set aside.
- Heat 2 tbs canola oil in another skillet.
- Add chopped tomatoes, cover and cook for 1-2 minutes.
- Add fish sauce + broth.
- Add fried pork-stuffed tofu.
- Cook uncovered until the tomato sauce is reduced by half.
- Sprinkle 1/4 tsp ground pepper before serving.
