Mooncake series: Salted eggs

Today, kiddos each gave me one positive thing about distant learning.

10-year-old: I like my study pod.
5-year-old: I spend more time with you.
8-year-old: I can go to the bathroom ANY time I want.

Oh well…

Salted eggs

(From Savoury Days)

20 large eggs
1.5 liters water
375 g salt
2 whole star anises
1 whole nutmeg
1 cinnamon stick
1 piece of fresh ginger, about 1″ (thickly sliced)
20 g sugar
20 ml vodka
A large jar

  1. In a large stockpot, boil water + salt + star anises + nutmeg + cinnamon stick + fresh ginger. Let it boil for 3-5 minutes.
  2. Remove from the heat.
  3. Add sugar and stir until combined.
  4. When the salt water is completely cool, add vodka.
  5. In a large jar, add salt water and eggs. Cover and let it rest for 4-6 weeks.
