Spiced marinated lamb chops

Spiced marinated lamb chops

(Adapted from Bon Appetit)

4 servings

Marinated lamb chops:
8 lamb chops
1 cup Greek yogurt
Juice of 1/2 lemon
2 tsp ground cumin
1 tsp ground coriander
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground cloves
2 garlic cloves (grated)
Kosher salt and pepper

Garlicky yogurt sauce:
1/2 cup yogurt
Juice of 1/2 lemon
2 garlic cloves (grated)
Kosher salt and pepper

To make spiced marinated lamb chops:

  1. In a small bowl, mix yogurt + lemon + cumin + coriander + cinnamon + nutmeg + cloves.
  2. Grate garlic into the mixture.
  3. Season with salt and pepper.
  4. Sprinkle salt and pepper onto the lamb chops.
  5. Use you hand to rub the spiced yogurt mixture onto the lamb chops.
  6. Marinate for at least 30 minutes at room temperature or over night in the refrigerator.
  7. Grill or fry lamb chops on a skillet, about 3 minutes each side.
  8. Serve with garlicky yogurt (recipe below) and go well with roasted potatoes and a lemony salad like watercress salad with fennel and orange.

To make garlicky yogurt sauce:

  1. In a small bowl, mix all ingredients together.
  2. Store in the fridge until ready to use.
