Spiced marinated lamb chops
(Adapted from Bon Appetit)
4 servings
Marinated lamb chops:
8 lamb chops
1 cup Greek yogurt
Juice of 1/2 lemon
2 tsp ground cumin
1 tsp ground coriander
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg
1/8 tsp ground cloves
2 garlic cloves (grated)
Kosher salt and pepper
Garlicky yogurt sauce:
1/2 cup yogurt
Juice of 1/2 lemon
2 garlic cloves (grated)
Kosher salt and pepper
To make spiced marinated lamb chops:
- In a small bowl, mix yogurt + lemon + cumin + coriander + cinnamon + nutmeg + cloves.
- Grate garlic into the mixture.
- Season with salt and pepper.
- Sprinkle salt and pepper onto the lamb chops.
- Use you hand to rub the spiced yogurt mixture onto the lamb chops.
- Marinate for at least 30 minutes at room temperature or over night in the refrigerator.
- Grill or fry lamb chops on a skillet, about 3 minutes each side.
- Serve with garlicky yogurt (recipe below) and go well with roasted potatoes and a lemony salad like watercress salad with fennel and orange.
To make garlicky yogurt sauce:
- In a small bowl, mix all ingredients together.
- Store in the fridge until ready to use.
